My easy recipe for cheesy rice in the rice cooker can be made in about 15 minutes. A simple side dish that’s a family favorite.

I have been using my rice cooker lately to help make quick and easy dinners. My kids love macaroni and cheese so I thought it would be fun to make them rice and cheese for something different.

This is a basic rice cooker white rice recipe with the addition of shredded cheese. I also decided to use chicken broth instead of water for the cooking liquid to really amp up the flavor.

Cheesy rice has quickly become a family favorite and now I find myself making it often.

Cheesy rice ingredients

  • Rice – I recommend using long grain rice for this recipe.
  • Chicken broth – Broth adds extra flavor to this rice. You can use chicken broth or vegetable broth.
  • Salt and pepper
  • Shredded cheese – Shredded cheddar cheese works well but you can use any type of

How to make cheesy rice in the rice cooker

  1. Place the rice, chicken broth, salt, and pepper in the rice cooker.
  2. Close the rice cooker lid and cook the rice.
  3. Once it’s finished cooking, open the lid and mix in the shredded cheese. Close the lid for about 1 minute to help the cheese melt. Serve the rice warm.

Heather’s recipe tips

  • Rinse your rice. This helps to remove the starch on the surface of the rice which helps the rice to be nice and fluffy.
  • Use freshly shredded cheese. Using fresh cheese will make a difference in the texture and taste.
  • You can easily double this recipe. This recipe makes enough for about 2 servings. You can double the recipe for a larger group.

Variations

Cheesy rice is such a simple recipe and it’s easy to add your own twist. Here are a few suggestions:

Vegetables – You can mix in vegetables like steamed broccoli, peas and carrots, or diced onion.

Protein – Once the rice has cooked you can add in crumbled cooked ground beef or ground sausage, or shredded chicken.

Butter – If you want a more rich flavor, add in 1 tablespoon of unsalted butter when cooking the rice.

Cream – If you would like to make this rice a little creamy, mix in a small splash of heavy cream after the rice has finished cooking.

What to serve with cheesy rice

This is a wonderful side dish that pairs well with many things like pork, chicken, meatloaf, and so much more.

Can you use different rice?

Yes, you can use different types of rice like brown rice or basmati rice. It might change the cook time of the rice but your rice cooker should account for that.

How to store leftovers?

You can store any leftover rice in an airtight container in the refrigerator for up to 4-5 days. You can reheat the rice in the microwave or on the stove.
