Heather’s recipe tips
- No water needed. Don’t add water to the batter. It’s just the cake mix and lemon filling.
- Don’t overmix. It’s important to gently fold the ingredients together. I like to use a spatula. Too much mixing can deflate the batter.
- Check for doneness. You will know these cake mix lemon bars are done when the top starts to turn light golden brown and an inserted toothpick comes out clean.
- Let them cool. Make sure to let them completely cool before slicing.
Variations
I love the simplicity of this recipe but you can make it your own with a few variations.
Extra lemon – Pump up the lemon flavor by adding in some lemon zest to the batter. You could also add a tablespoon of fresh lemon juice.
Pie filling – Replace the lemon pie filling with cherry pie filling or blueberry pie filling.
Toppings – Top the 2 ingredient lemon bars with powdered sugar, whipped cream, or drizzle this lemon glaze recipe.

Storage
Store: Store these easy cake mix lemon bars in an airtight container at room temperature for 2-3 days. You can also store them in the refrigerator for 3-4 days.
Freeze: I like to wrap them in plastic wrap and then place in a freezer safe bag.
