My brownie mix cookies recipe is the ultimate box brownie mix recipe. Chewy, rich chocolate cookies that are so delicious, you will never believe they were made from a box mix.

I love using cake mixes to make different recipes like cake mix brownies, cake mix cookie bars, and cake mix waffles but today I am using a brownie mix to make cookies. Brownie mix cookies are such a fun twist on a classic dessert.
My son is obsessed with brownies, so I thought it would be fun to try something different and make them into cookies. After a few tries, and some very happy taste testers, I found the perfect recipe that everyone in my family loves. The cookies are rich, fudgy, and have that amazing brownie flavor.
One of my favorite things about this recipe is that it’s easy to make. If you are looking for a weeknight dessert or something to bring to a party, these cookies are always a hit. It’s the best of both worlds, crispy edges and a soft, fudgy center.

Ingredients
- Box brownie mix – I use Ghirardelli double chocolate mix and have also used Pillsbury brownie mix. I would recommend not using Betty Crocker for this recipe since it doesn’t contain baking soda and could cause the cookies to flatten.
- Vegetable or canola oil – Either of these work well. You can also use coconut oil.
- Eggs – Two eggs are needed for this recipe.
- All-purpose flour – Just a little flour is needed for these cookies.
Variations
These chocolate crackle brownie cookies are perfect to mix in other ingredients. I recommend adding in 1/2-3/4 cup of the ingredient you choose. Here are a few suggestions:
- Chocolate chips or chunks
- Peanut butter chips
- Toffee bits
- 1/4 teaspoon cinnamon
- Sprinkles
- Chopped nuts
- Sprinkle the top with sea salt

- Mix: Mix together brownie mix, eggs, oil, and flour with an electric mixer until combined.
- Scoop: Scoop cookie dough and place on a lined baking sheet about 1 inch apart.
- Bake: Bake at 350 degrees F for 8-9 minutes.
- Cool: Let the cookies cool for 5 minutes on a wire rack.
Recipe tips
- There are several brands of brownie mix on the grocery shelves and each is a little different in size. I have made this with Ghriardelli and Pillsbury.
- Betty Crocker mix doesn’t contain baking soda so it might make the cookies flat. If you decide to use this brand, try adding 1/2 teaspoon of baking soda to help keep them from flattening.
- Line the baking sheet with parchment paper or a silicone mat.
- For uniform sized cookies, try using a cookie scoop.
- Don’t over bake these cookies. Once they cool they will be perfect on the inside. 8-9 minutes seems to be the perfect cook time.
- These cookies also make the perfect “sandwich” cookie. Try making a cookiewich using vanilla ice cream and two cookies or even fill with marshmallow fluff.
Storage
Store: Place the chocolate cookies in an airtight container and leave out at room temperature. They will last about 5 days.
Freeze: They can be frozen. Let them completely cool and then place in freezer safe bag, making sure to remove any excess air. Freeze up to 3 months. Let thaw in the refrigerator.

The big difference between the two mixes is that a cake mix contains more leavener. This helps the cake to rise. A brownie mix does not contain much leavener and they typically contain more sugar in the mix.
Yes, these cookies can be frozen. Let the cookies completely cool and then place in a freezer safe bag or container. Freeze for up to 3 months.

Great, easy recipe!!!
I realized i made the cookies way too big in the first batch. I just added a few minutes of baking time. They do come out flat if your make them too big. I also realized if the batter sits for a few minutes it thickens and is easier to scoop.
Excellent recipe, ice them with a mocha icing and these are superb! They are excellent brownie cookies, moist and delicious. Preferred to regular brownies that can be dry.
I have a question about the size of the brownie mix you used. I have seen them in the store ranging from 13.5oz to 18.5 oz. do I have to alter the ingrediants acording to the size of the mix.
Can I use coconut oil⁉️
I have not tried them with coconut oil.

My granddaughter loves these made them for her a lot. My granddaughter in law just asked for recipe her and my great granddaughter love them also
Used applesauce in place of oil. Runny texture. Added a bit more flour. Same. But, they baked up well and are delicious. Probably my error.

That calorie count is incorrect by tenfold. You must mean 180 calories per cookie.
These came out amazing! Added about 1/2 cup walnuts and 1/2 cup white chocolate chips. Baked for 9 minutes at 350⁰. They did not flatten as some of the posts had mentioned.
I used the Pillsbury 13×9 family size box and used the amount of oil, eggs, and flour specified in the recipe. Going to try with M&M’s next!
