Cheesy Beef and Noodle Casserole

Cheesy Beef and Noodle Casserole is creamy, cheesy and delicious. My family loves this easy meal filled with beef, diced peppers, onions, egg noodles and cheese.

I am all about an easy meal that doesn’t require a lot of ingredients. This cheesy beef and noodle casserole has everything you need for one complete meal.
HOW TO MAKE BEEF AND NOODLE CASSEROLE
Begin by browning the ground beef in a skillet. Be sure to drain any excess grease once it’s cooked through. Add in diced green pepper, diced onion and salt and pepper.
Stir for 2-3 minutes and then add in a can of tomato sauce.
While the sauce is cooking, boil the egg noodles according to package directions. Drain once finished cooking.
In a bowl, mix together sour cream, cottage cheese and ground black pepper.
Spray a 9×13 casserole dish with non-stick spray. Layer half of the egg noodles, sauce mixture, cottage cheese mixture and 1 cup shredded cheese. Repeat the layers and bake for approximately 25 minutes.
TIPS FOR BEEF AND NOODLE CASSEROLE
- I used light sour cream and low-fat cottage cheese for this recipe but it works fine with regular.
- Feel free to use your favorite “melty” cheese. I love using a cheddar mix.
- If you have picky kids feel free to omit the onion or dice the onion and pepper very small.

Cheesy Beef and Noodle Casserole
Ingredients
- 1 lb ground beef
- 1 15 oz tomato sauce
- 1/2 cup diced green bell pepper
- 1/2 cup diced onion
- 12 oz egg noodles
- 2 cups small curd cottage cheese
- 1/2 cup sour cream
- 2 cups shredded cheese
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Preheat oven to 350 degrees F. Spray 9x13 casserole dish with non-stick spray.
- Brown ground been in a large skillet over medium heat. Cook until cooked through. Drain excess grease.
- Add diced green pepper and onion and stir for 2-3 minutes.
- Pour tomato sauce over ground beef and season with salt and pepper. Turn to low heat.
- While sauce is cooking, cook egg noodles according to package directions. Drain water.
- In a bowl, stir sour cream, cottage cheese and ground black pepper.
- Layer half of the noodles, half of the sauce, half of the cottage cheese mixture, and 1 cup of shredded cheese. Repeat layers.
- Bake for 20-25 minutes or until cheese is melted.
Notes
