Why this recipe works
- Simple – Talk about an easy recipe, this basically uses two simple ingredients, tortillas and shredded cheese. The other advantage is that you know the ingredients you are using and they can be customized.
- Fast – Can be made in less than 5 minutes.
Ingredients needed
Flour tortillas – I recommend using the small fajita size or taco size tortillas for the perfect portion. The burrito size is really big and I find harder to eat.
Cheese – If you look at the Taco Bell website you will see they use a blend of three cheeses, Pepper Jack, Mozzarella, and Cheddar. These cheeses melt really well. Tip – I recommend freshly shredding the cheese for the best taste and melt, but prepackaged shredded cheese will work too.
How to make Taco Bell Cheesy Roll Ups
Step one: Mix three cheese together to make a blend.
Step two: Place one of the tortillas and place on a microwave safe plate.
Step three: Place a layer of cheese on top of the tortilla. Microwave for 20-30 seconds or until cheese melts.
Step four: Carefully roll up the tortilla and serve.
Recipe tips
- Be careful not to place the cheese close to the tortilla’s edge. It might cause the cheese to spill out once it has melted.
- Keep an eye on the cheese do it doesn’t burn. Start with 15 seconds and add 5 seconds of cooking time until cheese is melted.
- Try serving with your favorite dipping sauce like this copycat Taco Bell quesadilla sauce, fresh salsa, ranch dressing, or avocado lime ranch.
Variations
One of the advantages of cooking at home is that you can personalize the recipe to your taste. There are several things you can add to this recipe for a little something different.
Cheese – Use your favorite cheese like a Mexican blend, Monterey Jack, or even shredded American cheese.
Seasonings – Try sprinkling a little seasoning into the cheese mixture like taco seasoning, or a homemade blend.
Protein – Try adding a little shredded chicken or beef.
Tortillas – You can substitute with gluten-free tortillas, whole wheat, or even veggie tortillas.
How to store
Store any leftovers in an airtight container in the refrigerator. They will last up to 2 days. These cheesy roll-ups don’t freeze well.
Reheat in the microwave for 15-20 seconds or until warmed.
Can these be made in the air fryer?
Yes, if you like the tortilla a little crispier, you can make these roll ups in the air fryer.
Place a tortilla in the air fryer basket. Top with cheese and cook at 375 for 1 minute. Carefully roll them up, lightly spray the tops with olive oil and cook another 1-2 minutes to crisp them up.
