Chicken Salad Chick used to be one of my go-to lunch spots when I lived in Georgia but now that I’m in Utah, there isn’t one around. So naturally I needed to recreate all of my favorite dishes like their yummy side dish, broccoli salad.

The mixture of salty bacon, crunchy broccoli, and a slightly sweet dressing is hard to beat. It is one of my go-to recipes when I need a dish to bring to a gathering. I also love making it to have as a side dish with dinner throughout the week.

Ingredients

The ingredients for this copycat Chicken Salad Chick broccoli salad are simple.

Bowl of broccoli florets, cheese, bacon bits, mayonnaise, and vinegar.
  • Broccoli – Fresh broccoli florets are used to make this salad.
  • Mayonnaise – I like using full-fat mayonnaise for the best taste. You can substitute with low-fat mayonnaise. I suggest using Duke’s mayonnaise.
  • Apple cider vinegar – This adds a nice tang to the dressing.
  • Sugar – Granulated sugar balances the dressing and adds a hint of sweetness.
  • Salt
  • Ground black pepper
  • Shredded cheese – The restaurant uses a mixture of mozzarella cheese and cheddar cheese.
  • Bacon – Fresh cooked and crumbled bacon or bacon bits.

Heather’s tip: If you don’t want to cook bacon, you can substitute with precooked bacon bits that you might find in the salad aisle of the grocery store.

How to make copycat Chicken Salad Chick Broccoli Salad recipe

Making your own copycat broccoli salad at home is super easy. You can also easily adjust or change the ingredients to fit your taste preference.

Step one: Prep – Begin by cutting your broccoli florets into small, bite-sized pieces. Cook the bacon in a large skillet over medium heat until browned. Drain excess grease and crumble the bacon. ***You can substitute with bacon bits.

Step two: Dressing – Make the dressing by combining mayonnaise, vinegar, sugar, salt, and pepper. Whisk it until the dressing combines.

Bowl with vinegar, mayonnaise, and seasonings.

Step three: Place the broccoli florets in a large bowl. Pour the dressing over the broccoli and toss. Add in the crumbled bacon and shredded cheese. Toss again to make sure everything is coated with dressing.

Heather’s recipe tips

  • Make sure to cut the broccoli into small pieces. It helps the broccoli get coated in dressing and makes it easier to eat.
  • I recommend shredding your own cheese. It has so much more flavor than the prepackaged shredded cheese.
  • I think this salad is best if it’s refrigerated for at least one hour. This helps the flavors come together and get into the broccoli.

Common questions

Can you make broccoli salad ahead of time?

This is a wonderful dish to make the night before. It allows time for the flavors to really distribute into the broccoli.

How to store?

Keep any leftover copycat Chicken Salad Chick broccoli salad in an airtight container in the refrigerator for up to 3 days. After that it starts to become too soggy. This salad does not freeze well.

Broccoli salad add-ins

If you are feeling adventurous you can incorporate extra ingredients into your broccoli salad.

Protein – Add in rotisserie chicken, turkey, or hard boiled egg for added protein.

Vegetables – If you are a veggie lover try adding in more like cauliflower, onions, shredded carrots, or diced bell pepper.

Other – I love mixing in some chopped pecans or sunflower seeds for a little added crunch. Dried cranberries or raisins are also a great addition.
