Ingredients
Simple ingredients are used for this recipe. You might even have them in your pantry. They can also be adjusted to taste.
- Rolled oats – You will want to use old-fashioned rolled oats for this recipe. Steel cut oats and quick oats do not give the best texture.
- Cocoa powder – Unsweetened cocoa powder gives these baked oats a delicious, rich chocolate flavor.
- Baking powder, salt – Baking powder helps the baked oatmeal rise and gives it a nice texture. A little bit of salt helps to balance the sweetness.
- Brown sugar – Brown sugar is used for sweetness. You can substitute with pure maple syrup.
- Eggs – Eggs are used as a binder. Be sure to lightly beat them before mixing with the other ingredients.
- Butter – Melted butter is used to add flavor. You can substitute with vegetable oil if you prefer.
- Vanilla – Vanilla extract adds a warm, sweet flavor to the dish.
- Milk – The milk helps to soften the oatmeal. Feel free to use your favorite milk. Whole milk will add a richer flavor but you can substitute with 2% your choice of milk.
- Chocolate chips – I am using semi-sweet chocolate chips.
How to make chocolate baked oatmeal
Step one: Preheat the oven to 375 degrees F. Spray an 8 x 8 baking dish with nonstick cooking spray.
Step two: Place the oatmeal, baking powder, salt, brown sugar, and cocoa powder in a large mixing bowl. Stir in melted butter, beaten eggs, milk, and vanilla.
Step three: Pour the mixture into the prepared dish. Spread it out into an even layer. Top with chocolate chips.
Step four: Bake for 25-30 minutes. Let rest about 10 minutes before serving.
Variations
Protein powder – If you would like to add extra protein, add a scoop of vanilla or chocolate protein powder to the mix. This is also delicious with a dollop of peanut butter on top for added protein.
Sweetener – Don’t want to use brown sugar? You can substitute with 1/4 cup maple syrup.
Milk – Use your favorite milk like almond milk, soy milk, oat milk, or dairy milk.
Other add-ins: Like chocolate and banana? Try mixing in a mashed banana in with the oats for some banana flavor. You could also mix in flax seeds.
Storage
- Make-ahead: You can prepare this baked oatmeal the night before, cover and store in the refrigerator to bake the next morning.
- Leftovers: Store any leftovers in an airtight container. It will last in the refrigerator for 3-4 days.
- Freeze: This does not freeze well.

This is great as a stand alone meal but we also like serving it alongside other breakfast favorites like bacon, eggs, coffee, and fresh fruit.

Instructions
- Preheat oven to 375 degrees F. Spray an 8 x 8 casserole dish with nonstick cooking spray.
- In a large bowl, stir oats, cocoa powder, baking powder, and salt.
- Stir in melted butter. Mix in vanilla extract, milk, and eggs.
- Pour the mixture into prepared baking dish and spread into an even layer. Spread chocolate chips on top of the oatmeal mixture.
- Bake for 25-30 minutes. Let cool for 5-10 minutes before cutting and serving.
