My cinnamon roll casserole recipe is so easy to make and perfect to serve for brunch, during the holidays, or just for a fun breakfast. I make it with canned cinnamon rolls to save on time. If you are looking to step up your cinnamon roll game, this casserole is a must try.

I grew up eating “thump” cinnamon rolls. Thats what my mom called the canned Pillsbury rolls because you had to thump the can on the counter to get it to open. Now one of our favorite ways to eat these cinnamon rolls is in a casserole.
This recipe is great if you are feeding several people but the best part is that it can be assembled the night before, making breakfast the next day so easy.

Cinnamon roll casserole ingredients

- Canned cinnamon rolls – The recipe uses 2 cans of cinnamon rolls plus the icing that comes with them. I prefer the Pillsbury cinnamon rolls but feel free to use your favorite brand.
- Eggs – The eggs form a custard like mixture, similar to bread pudding.
- Half and half – You can substitute with milk or even heavy cream for a rich flavor.
- Ground cinnamon – Cinnamon adds a warmth and gives this dish a flavor similar to a french toast casserole.
- Vanilla extract – Adds warms and sweetness.
- Brown sugar – This is optional but it a little extra sweetness to the casserole.
How to make cinnamon roll casserole

Step one: Preheat the oven to 350 degrees F.
Step two: Cut each of the cinnamon rolls into 8 pieces.
Step three: In a large bowl, whisk together eggs, half and half, vanilla, and cinnamon. Pour the cinnamon roll pieces into the mixture and toss to coat.
Step three: Melt butter and pour into a 9 x 13 casserole dish. Pour mixture into the prepared dish. Make sure to spread the mixture out into an even layer. Sprinkle the top of the casserole with brown sugar, this is optional but adds a nice flavor.
Step four: Bake for about 25 minutes until the top starts to turn golden brown. Let the casserole cool for 5-10 minutes. Microwave the icing for 5-10 seconds and pour over the casserole.
Heather’s recipe tips
- Try using a pizza cutter to cut the rolls into pieces. You can also use a sharp knife.
- I recommend warming up the icing just a little in the microwave to make it simple to pour over the casserole. Try microwaving for 5-10 seconds.
How to store leftovers
Make ahead: You can make the recipe the night before, just don’t bake. Cover the dish with plastic wrap and keep in the refrigerator. When ready to eat the next morning, remove from the refrigerator and let come close to room temperature. Bake according to directions.
Store: Make sure to let the leftovers cool before storing. You can cover with plastic wrap or foil and store in the refrigerator for up to 4 days. This casserole can also be transferred to an airtight container.
Freeze: Cut into portions and freeze in a freezer safe container or bag for up to 3 months. Reheat in the oven at 350 degrees F or in the microwave.

Rolls – You can also use Grand cinnamon rolls, just make sure to cut them into smaller pieces. Canned orange rolls will also work well.

Yes, this recipe does well preparing the night before. Prepare everything according to the recipe, just don’t bake. Cover the dish with plastic wrap and store in the refrigerator. When ready to bake, set the dish out for about 15-30 minutes before baking and then bake according to directions and add the icing.
You can use frozen cinnamon rolls but you will need to prepare the casserole the night before serving. Let the frozen rolls thaw enough to be able to cut into pieces. Once you cut them, make the recipe according to instructions. (Don’t bake.) Cover the dish and place in the refrigerator overnight. Before you are ready to bake, take the dish out of the refrigerator and take off the plastic wrap. Let sit for about 30 minutes and then bake.

Canned Cinnamon Roll Casserole Recipe
Ingredients
- 3 tablespoons butter
- 2 12.4 ounce cans cinnamon rolls plus the included icing
- 4 eggs
- 1/2 cup half and half
- 1 teaspoon vanilla extract
- 2 teaspoons cinnamon
- 1/3 cup light brown sugar
Instructions
- Preheat the oven to 350 degrees F.
- Cut each cinnamon roll into 8 pieces.
- In a large mixing bowl, whisk eggs, half and half, vanilla, and cinnamon. Add cut cinnamon rolls into the bowl. Toss to coat with the mixture.

- Let the casserole cool for 5-10 minutes. Microwave each cup of icing for 10-15 seconds and pour over the casserole.
