I can’t get enough of chicken salad, especially in the warmer months. It’s full of protein and so easy to make. One of my favorite restaurants is Chicken Salad Chick but unfortunately, they don’t have any where I currently live. No problem, I made my own copycat recipe.

Chicken Salad Chick has a variety of different chicken salad flavors like their Buffalo Barclay, Fruity Fran, and Sassy Scotty. The Classic Carol is just a simple base chicken salad that is made with tender chicken, mayo, seasonings, and a little diced celery.

Try serving your chicken salad with some tasty sides like broccoli salad and grape salad.

Classic Carol Chicken Salad Ingredients

This recipe is so simple and you probably already have most of the ingredients in your kitchen.

Chicken tenders, diced celery, bowl of seasonings, mayonnaise, and chicken broth.
  • Chicken – I recommend using chicken tenderloins for a taste similar to Chicken Salad Chick. You could also use chicken breast or rotisserie chicken.
  • Chicken broth – This is a great way to add extra flavor to the chicken. If you don’t have broth you can boil the chicken in water.
  • Mayonnaise – Duke’s mayonnaise is my go-to when making chicken salad but feel free to use your favorite.
  • Celery – 1-2 stalks of celery, diced.

How to make copycat Chicken Salad Chick Classic Carol

You can make your own copycat Classic Carol at home in just a few easy steps.

***Reminder: If you are using pre-cooked chicken or rotisserie chicken, you can skip step 1 and step 2.

Step one: Add chicken broth to a large pot and bring to a boil. Add chicken tenders and boil for 10 minutes or until the internal temperature of the chicken reaches 165 degrees F. (If you are using chicken breasts, it might take a little longer to boil.)

Step two: Put the cooked chicken tenders in a food processor or mixer. Pulse to shred the chicken.

Step three: Place mayonnaise, diced celery, and seasoning in a large bowl. Stir to mix. Stir in the shredded chicken.

Step four: You can serve immediately or cover and store in the refrigerator until ready to serve. This is a wonderful recipe to make the night before and have for lunch the next day or use as meal prep.

  • Mayonnaise: The best part about cooking at home is that you are in control of your ingredients. You can use less or more mayonnaise depending on your preference.
  • Chicken: To shred the chicken you can use a food processor, mixer, or shred it by hand. Be sure not to over-pulse or over-mix the chicken when shredding.
  • Celery: Make sure to dice the celery small.
  • Serving: I recommend letting the chicken salad chill in the refrigerator for about an hour before serving, however, you can serve immediately after making.

Classic Carol Chicken Salad variations

This recipe tastes very close to the restaurants. You can change it up a little and experiment to your taste.

A few variations include:

Onion – Add in 1/4 cup diced onion for added flavor.

Seasonings – If you would like to add a little extra kick of flavor, add in 1 tablespoon of dry ranch seasoning.

Herbs – You could add in some fresh herbs like parsley, chives, even dill for some color and flavor.

Nuts – Slivered almonds work well in this chicken salad and give it a little crunch.

How to serve chicken salad

You can serve this chicken salad in a number of ways like:

  • Lettuce – Add a big scoop on a bed of lettuce or salad.
  • Sandwich – This chicken salad recipes makes an amazing sandwich. I especially like serving it on croissants, sourdough bread, wheat bread, and more.
  • Wraps – Place a scoop in a tortilla or flat bread for a tasty wrap.
  • Peppers – I love cutting a bell pepper in half and filling it with a scoop of chicken salad.

How to store copycat Chicken Salad Chick Classic Carol

Store in an airtight container in the refrigerator for 3-4 days. This recipe does not freeze well.

Copycat Classic Carol Chicken Salad Chick

Ingredients 

  • 1 pound chicken tenders or chicken breast
  • 8 cups chicken broth
  • 1/2 cup mayonnaise
  • 1 stalk celery, diced
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon celery salt
  • 1/8 teaspoon ground black pepper
  • 1/8 teaspoon salt

Instructions 

  • Add chicken broth to a large pot and bring to a boil. Place the chicken into the boiling broth. Turn the heat to medium and cook for 10 minutes or until internal temperature reaches 165 degrees F. Note: If you are cooking large chicken breasts, the cooking time might be longer.
  • Place the cooked chicken tenderloins in a food processor. Pulse to shred the chicken being sure not to over pulse. You could also use a fork to shred the chicken.
  • Place mayonnaise, garlic powder, onion powder, celery salt, salt, and pepper into a bowl. Stir to combine.
  • Mix in shredded chicken and diced celery.
  • Cover and refrigerate until ready to serve.

  1. I love this recipe! I use the giant frozen chicken from Sam’s Club. Should the chicken weight one pound before or after it is cooked?
