Cottage cheese queso is the latest viral recipe taking the internet by storm. It’s a creamy, protein packed dip that is a tasty twist on a classic queso. Made with just 4 ingredients, this dip can be whipped up in minutes and is perfect for snacking. Once you try it, you’ll see why it’s so popular!

I’ll admit , I spend more time than I’d like to admit scrolling through social media, but it’s hard to resist when there are so many creative, delicious recipes popping up. So when I stumbled on this viral cottage cheese queso dip, I knew I had to give it a try.

Now, I know that cottage cheese can be a polarizing ingredient. There are usually 2 camps: those who love it and those who avoid it no matter what. But I am willing to bet that this dip might convert the cottage cheese skeptics.

The trick is whipping the cottage cheese until it’s nice and creamy so it doesn’t have the same texture. With the addition of shredded cheese, seasoning, and Rotel, you won’t even realize there is cottage cheese in this dip.

When I first made this dip, my kids couldn’t stop eating it. It’s now a snack I love to make, especially if I’m trying to up my protein for the day.

Ingredients

  • Cottage cheese – Use you favorite cottage cheese. I recommend using full fat cottage cheese.
  • Taco seasoning – You can use a seasoning pack or homemade seasoning.
  • Shredded cheese – I recommend using freshly shredded cheese like cheddar or pepper jack.
  • Rotel – You can use a can of drained Rotel tomatoes or a chunky salsa.
  • Water – This helps to thin out the queso.

How to make cottage cheese queso dip

  1. Place the cottage cheese in a food processor or blender. Whip the cottage cheese until creamy.
  2. Add in the shredded cheese, taco seasoning, and water. Blend until smooth.

  1. You can seve as is or stir in drained Rotel diced tomatoes with green chiles.
  2. If you would like it hot. Microwave for 1 minute.

Heather’s recipe tips

  • Make sure to whip the cottage cheese first. This is an important step that I didn’t do the first time working on this recipe. If you don’t whip it first, the dip will be a little lumpy. You can use a high powered blender or food processor.
  • Warming the queso. I tried warming the queso on the stove and found that you need to warm it on low for just a minute or two. It’s easiest to heat in the microwave in 15 second intervals. You can to be careful not to overheat or the dip will separate.

Variations

  • Seasonings: You can substitute the taco seasoning with fajita seasoning or even nutritional yeast.
  • Cheese: You can substitute cheddar cheese with pepper jack cheese, monterey jack, or a Mexican blend.
  • Water: If you want to extra spice, replace the water with jalapeno brine from a jar of jalapenos.
  • Rotel: You can substitute the Rotel with a chunky salsa or leave it out completely.

How to serve cottage cheese queso

There are many ways to eat this queso with cottage cheese.

Dippers – Tortilla chips, corn chips, potato chips, pretzels, crackers, cucumbers, carrots, celery, bell peppers, and more.

Nachos – Serve this over tortilla chips topped with taco meat or shredded chicken.

Tacos – Spread it on tacos, tostadas, or even fajitas.

Burrito bowl – Serve it on a burrito bowl for extra protein.

Storage

Store any leftover queso dip in the refrigerator for up to 3 days.
