Crockpot Chicken Fajitas is a great recipe for an easy weeknight meal. Perfect in a tortilla or on a rice bowl. You will love this slow cooker meal!

Crockpot chicken fajitas is one of my favorite slow cooker recipes. No need to fire up the oven or the grill. The slow cooker does all of the work!
Cooking this chicken in the slow cooker allows it and the vegetables to develop so much flavor. It truly is a delicious set it and forget it meal.
Ingredients needed
Chicken breast – I like using boneless, skinless breasts for this meal.
Onions and peppers – These are key to a delicious fajita.
Tomatoes with green chilies – You can find these diced tomatoes in the canned vegetable aisle. If you are in a pinch, use your favorite salsa instead.
Fajita seasoning – Use premade seasoning or make your own.

How to make crockpot chicken fajitas

- Prepare: Cut bell peppers and onions into thin strips. Lay them on the bottom of slow cooker.
- Place chicken breasts on top of vegetables and then cover the chicken with fajita spice blend.
- Cook: Dump can of tomatoes with green chilies on top of the chicken. Cover the slow cooker and cooker either on high for 3-4 hours or low 6-8 hours.
- Serve: Once the chicken has cooked either cut into strips or shred.
Fajita seasoning blend
I made my own fajita seasoning blend for this crockpot chicken recipe but you could also use a pre-made blend.
- 2 teaspoons chili powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
How to serve
There are a number of ways to use this flavorful chicken and peppers. Of course in a flour tortilla with all of the fixins but I also love topping a bowl of brown, white rice or Spanish rice with the chicken mixture for a fajita bowl. Use it for a quesadilla, nachos, salad or a burrito, the possibilities are endless.

Tips and variations for crockpot chicken fajitas
- If you are a veggie lover, add in sliced mushrooms or squash the last 30 minutes of cooking time.
- Don’t like chilies? Substitute a can of petite diced tomatoes or salsa.
- If serving with tortillas, I like to warm them in the oven or quickly in a skillet.
How to store
Store any leftovers in an airtight container in the refrigerator for up to 5 days. Reheat in the crockpot or on the stove.

Crockpot Chicken Fajitas
Ingredients
- 1.5 lbs boneless, skinless chicken breast
- 1 red bell pepper, cut into strips
- 1 yellow bell pepper, cut into strips
- 1 sweet onion, sliced
- 1 14.5 oz tomatoes with green chilis (like Rotel)
Fajita Spice Blend
- 2 teaspoons chili powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
Instructions
- Place sliced peppers and onion on the bottom of slow cooker.
- Place chicken breasts on top of peppers and onions.
- In a small bowl, mix together fajita spice blend. Top the chicken with the spices.
- Pour can of tomatoes with green chilies on top of chicken.
- Cover with lid and cook on high for 3-4 hours or low 6-8 hours. Once chicken has cooked, either slice the chicken or shred and return to slow cooker.

This is currently in the crockpot but the top of the recipe (for the Fajita seasoning) says 2 tablespoons of chili powder. The bottom of the recipe says 2 teaspoons. I’m not the biggest fan of spice so we’ll see how this one turns out
