Heather’s recipe tips
- Cover the baking dish tightly. Covering the dish helps to trap the steam to make sure the rice fully cooks.
- Don’t peak! Don’t uncover the dish during cooking. This will release the steam and could prevent the rice from cooking.
- Check the temperature. Make sure to check the chicken’s internal temperature to ensure it is fully cooked. It should reach at least 165 degrees F.
- Let it rest. I recommend letting it rest 5 minutes before serving. This lets the rice finish absorbing any liquid.
Variations and substitutions
- Liquid: For even more flavor, replace the water with chicken broth.
- Chicken: This works with chicken breasts or chicken thighs.
- Rice: If you don’t want to use minute rice, you can substitute with long grain white rice. If you want to use brown rice, add 1/2 cup extra water and bake an extra 15-20 minutes.
- Soup: Try substituting with cream of celery soup.
- Vegetables: Try adding frozen vegetables like peas and carrots.
Storage
Store any leftovers covered in the refrigerator for up to 3 days. You can reheat in the oven at 325 degrees F.
