Ingredients

Kielbasa – Kielbasa is the Polish word for “sausage”. Polish sausage can typically be found by the hot dogs in the grocery store. You can also substitute with turkey or beef kielbasa.

Potatoes – Pick softer, tender potatoes like Yukon gold potatoes or red potatoes. You can also use russet potatoes.

Onions – You will need a small onion for this recipe. I recommend using a sweet Vidalia onion if possible but a yellow or red onion will work just fine.

Bell Pepper – Use red bell pepper, green pepper, or yellow peppers.

Garlic – The recipe uses 1 clove of garlic but you can substitute with 1/2 teaspoon of garlic powder.

Olive oil – Helps to saute the potatoes, onion, pepper and garlic. (not pictured)

Salt and Pepper – Season with salt and pepper. Optional, sprinkle with fresh parsley.

Recipe substitutions

This recipe is easy to adjust for different tastes. A few of our favorite variations are:

  • Sauerkraut – Add a little tang to the dish. Stir it in towards the end of cooking.
  • Cabbage – You can add in shredded cabbage or halved brussel sprouts when you add in the onion.
  • Cheese – Try topping with shredded cheddar cheese at the end.

How to make Kielbasa and Potatoes

  1. Slice kielbasa into 1/4-inch thick rounds.
  2. Place sliced kielbasa into a large skillet and cook over medium heat until they start to brown. Make sure to occasionally stir so that they don’t stick.
  3. Carefully remove the kielbasa sausage from the skillet but be sure to leave any grease.
  4. Add in a little oil, diced potatoes, salt and pepper. Stir the potatoes and then cover the skillet. Cook for 8-10 minutes, stirring occasionally, or until potatoes start to soften and become fork tender.
  5. Remove lid and add in diced onion and bell pepper. Keep cooking another 7-8 minutes or until they start to soften.
  6. Stir in minced garlic and cook 1-2 minutes more.
  7. Add in kielbasa and let warm through.
  8. Optional garnish with fresh parsley. Serve hot.

Recipe tips

  • If the Polish sausage leaves a lot of grease in the skillet, you might not need to add any olive oil.
  • If you are using turkey sausage, you might need to add an extra tablespoon of olive oil.
  • If you are using a tougher potato, like russets, you might want to cut them and then microwave for 5 minutes before adding to the skillet to help soften them up.
  • Try adding in some sauerkraut or shredded cabbage towards the end of the cooking process for a little crunch.
  • This meal is also delicious topped with fresh diced tomatoes.
  • Like a little heat? Try adding 1/2 tablespoon of crushed red pepper to the mixture or a little hot sauce.

How to store

Store: Let any leftovers cool. Store in an airtight container in the refrigerator.

Reheat: Reheat in a skillet over medium heat for about 5 minutes or in the microwave for 2-4 minutes or until heated through.

This recipe was very tasty. I only had green pepper which works well. I didn’t have any garlic other than what comes in a jar. Wasn’t happy about that. Next time it’ll be the real thing. That being said, I would definitely make this again.
