These lime coconut balls are a simple, cool, no bake dessert. Sweet and tart with a hint of lime flavor, these coconut balls are great to bring to your next gathering.

If you enjoy coconut, you will love these lime coconut balls. Similar to these orange coconut balls, these are made with a limeade concentrate.

Ingredients needed

Powdered Sugar – Use powdered sugar for this recipe.

Vanilla Wafer Cookies – Use a whole box of vanilla wafers to make these balls.

Macadamia Nuts – If you don’t like macadamia nuts you can substitute with pecans or almonds.

Limeade Concentrate – You will need frozen limeade that is slightly thawed. You can usually find this in the freezer section of your grocery store. (Only need about half the can.)

Butter – Softened, unsalted butter.

Vanilla Extract – Adds a little sweetness to the dessert.

Sweetened Coconut Flakes – These are used to cover the lime balls.

Lime Zest – This is optional but adds more zesty lime flavor.

How to make lime coconut balls

Step one: Place powdered sugar, crushed cookies, chopped nuts, limeade, vanilla, butter, and lime zest in a large bowl.

Step two: Stir together well until completely combined.

Step three: Roll mixture into small balls and then roll the balls in shredded coconut. Place on a baking sheet and then in the refrigerator to chill.

Recipe tips

  • Try using a cookie scoop for uniform sized coconut balls.
  • If you want them to chill faster, place in the freezer for about 30 minutes.
  • Want to add a little green color, add a few drops of green food coloring to the mixture.

How to store

Make sure to store any leftover in an airtight container in the refrigerator. They will last up to a week

Lime Coconut Balls

Sweet and tart, these lime coconut balls are a simple treat. Lime coconut balls are a great no-bake dessert that are perfect to serve any time of year.
Prep: 10 minutes
Chill time: 2 hours
Total: 2 hours 10 minutes
Servings: 50 balls

Ingredients 

  • 2 cups powdered sugar
  • 1 11 ounce box, Nilla wafers
  • 1 cup macadamia nuts
  • 6 tablespoons unsalted butter, softened
  • ½ teaspoon vanilla extract
  • ¾ cup limeade concentrate, thawed
  • ½ teaspoon lime zest
  • 2 cups sweetened coconut flakes

Instructions 

  • Line a cookie sheet with wax paper.
  • Place Nilla cookies in a food processor. Pulse until crushed into a crumb texture.
  • Remove the crumbs and place in a large bowl.
  • Place the macadamia nuts in the food processor and pulse until chopped. Pour the nuts in the bowl with the crushed cookies.
  • Add powdered sugar, softened butter, limeade concentrate, vanilla extract, and lime zest into the same bowl with the cookies and nuts.
  • Stir all of the ingredients together until combined.
  • Place the coconut flakes on a large plate or bowl.
  • Using a small cookie scoop or spoon, scoop out the mixture and roll into 1-inch balls.
  • Roll each ball in the coconut flakes and then place on the baking sheet.
  • Chill in the refrigerator for at least 2 hours before serving.
