My recipe for one pound meatloaf is just what you need when serving a smaller group. A flavorful, moist meatloaf topped with an incredible sauce. It’s a recipe I turn to when I have a pack of ground beef in the refrigerator.

I usually have a pack of ground beef to use for dinner during the week. Lately my kids have been asking me to use it to make this simple meatloaf recipe.

It’s a smaller version of my air fryer meatloaf that I reduced down to just one pound of meat instead of two. This helps it cook a little faster and it’s a great size for a weeknight dinner.

One pound meatloaf ingredients

  • Ground beef – I like using ground beef that is at least 80% lean. This helps to cut back on the grease.
  • Breadcrumbs – You can use regular breadcrumbs or Panko breadcrumbs.
  • Egg – This helps to bind the meatloaf together.
  • Milk – Adds a little moisture to the meatloaf.
  • Worcestershire – Imparts extra beefy flavor.
  • Onions – Diced onions are used. Make sure to dice them small.
  • Seasonings – Italian seasoning, garlic powder, salt, and ground black pepper
  • Brown sugar – Adds sweetness to the meatloaf sauce.
  • Ground mustard – Ground mustard is the perfect balance to the sweetness of the sauce.
  • Ketchup – The base of the meatloaf sauce.

How to make one pound meatloaf

  1. Place ground beef, breadcrumbs, milk, egg, onion, Worcestershire sauce, and seasonings in a large bowl.

  1. Combine the ingredients. Be sure not to over mix.

  1. Form the mixture into a meatloaf form. Place on a baking sheet and bake at 350 degrees for 30 minutes.
  2. Combine the brown sugar, ketchup, and ground mustard in a bowl. Brush the meatloaf sauce over the meatloaf and continue baking for another 15-20 minutes.

Heather’s recipe tips

  • Make sure not to over mix the meatloaf mixture. This helps to prevent it from being tough.
  • Line your baking pan with foil for easy clean-up.
  • If you need to make this for a larger crowd, double the recipe and make 2 meatloafs.
  • Be sure to check the internal temperature with a meat thermometer. The temperature should reach at least 165 degrees F.
  • Let the meatloaf rest for 5-10 minutes before serving.

How to store leftovers

Store any leftover meatloaf in an airtight container in the refrigerator. It will stay good for 3-4 days.

Reheat in the microwave or back in the oven at 350 degrees.

You can also freeze any leftovers. Place in a freezer safe bag for up to 3 months.

I like using leftovers to make this meatloaf sandwich.

1-lb meatloaf variations

This recipe is easily customizable. Here are a few ways you can adjust the recipe to your taste.

  • Protein – You can substitute the ground beef with ground turkey, ground chicken, or ground bison.
  • Meatloaf sauce – If you would prefer a different sauce, you can top with your favorite BBQ sauce.
  • Seasonings – You can replace the diced onions with onion flakes. You could also replace the seasonings with a package of onion soup mix.
  • Vegetables – Sneak in some veggies by adding finely diced mushrooms, bell peppers, or celery to the mixture.

Yes, you can combine all of the ingredients, cover and store in the refrigerator until ready to bake.

One Pound Meatloaf Recipe

Learn how to cook one pound meatloaf that is topped with a delicious meatloaf sauce. This meatloaf is perfect for 2-4 people.

Ingredients 

  • 1 pound ground beef
  • 1 egg
  • 1/4 cup breadcrumbs
  • 1/4 cup milk
  • 1/2 cup diced onion
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

Meatloaf Sauce

  • 3/4 cup ketchup
  • 1/4 cup brown sugar
  • 1/2 tablespoon ground mustard

Instructions 

  • Preheat the oven to 350 degrees F. Line a baking sheet with foil and spray with non-stick cooking spray.
  • Place ground beef, milk, breadcrumbs, egg, onion, Worcestershire sauce, garlic powder, Italian seasoning, salt, and pepper in a bowl. Gently mix until combined.
  • Form into a meatloaf form and place on the prepared baking sheet. Bake for 30 minutes.
  • While the meatloaf is baking, stir together ketchup, brown sugar, and ground mustard. After 30 minutes of baking, spread the meatloaf sauce on top of the meatloaf. Return to the oven and continue baking the meatloaf for 15-20 minutes or until the meatloaf reaches an internal temperature of 165 degrees F.
  • Let the meatloaf rest 5-10 minutes before serving.
