My recipe for oven roasted small potatoes is one that your friends and family will be asking for once they take a bite. Seasoned with a secret ingredient, these crispy potatoes with a tender, creamy middle, are the perfect side dish for almost any meal. These are the best potatoes around!

The secret to the potatoes is using Good Seasons Italian Dressing Mix. You might remember seeing this mix growing up because it makes the best salad dressing.
This seasoning also makes great potatoes! Combined with some olive oil, salt, and pepper, you have a simple side dish that everyone will love.
Roasted baby potatoes ingredients
- Potatoes – I like using about 2 pounds of small potatoes like baby gold potatoes, baby red potatoes, or the baby mulitcolor potatoes.
- Olive oil – Oil helps the potatoes crisp up.
- Italian seasoning – I like using the Good Seasonings Italian Dressing Mix. You can typically find it by the salad dressings in the grocery store.
- Salt and pepper
How to make oven roasted small potatoes
This is a super simple recipe to make at home. Scroll to the bottom for the full recipe plus a video.
Step one: Prep – Preheat your oven to 400 degrees F. Make sure the oven rack is in the middle of the oven. Cut the potatoes in half.
Step two: Season – Place the potatoes on a baking sheet. Drizzle with olive oil and then sprinkle with Italian seasoning, salt, and pepper.
Step three: Toss the potatoes in the oil and seasonings. Make sure to get them all coated. Place the potatoes cut side down on the baking sheet.
Step four: Roast the potatoes for 20-30 minutes or until the potatoes are fork tender. Serve warm.

- Space out the potatoes on the baking sheet as much as you can for even baking.

- You can add shredded parmesan cheese to the potatoes before baking.

Keep any leftovers in an airtight container in the refrigerator for up to 4 days.
You can reheat them in the oven at 375 degrees or in the air fryer.

- 1 0.7 ounce pack of Good Seasonings Italian Salad Dressing Mix
