A southern appetizer you can’t resist. This pimento cheese ball recipe is creamy and the perfect spread for a cracker or sandwich.
Living here in Georgia, pimento cheese is a way of life. We eat it on sandwiches, crackers and even celery if we are counting calories. For a party or a crowd, you can’t go wrong with this pimento cheese ball. It is creamy, tasty and perfectly spreadable.
My mom has been visiting us all week while Jay is away on business. We have been busy cooking up a storm like this beef and pasta casserole and eggnog cookie cups. I have had so much fun spending time with her and coming up with new recipes. It is nice to have someone to bounce ideas off of and the extra pair of hands is a life saver.
How to Make Pimento Cheese Ball
- Using an electric mixer, mix together cream cheese, other cheeses, mayonnaise, pimentos, green onions, garlic powder, salt and pepper. Let the mixture chill in the refrigerator.
- Once you make the mixture, let it chill and roll into 3 balls. You may leave the cheese balls as is or roll them in “toppings”.
- We decided to roll one in bacon bits, one in chopped up green onions and one in toasted pecans. I personally enjoy mixing bacon, green onions and pecans together and then rolling.

Pimento Cheese Ball
Ingredients
- 2 8 oz packages cream cheese, softened
- 1 1/2 cups shredded pepper jack cheese
- 1 1/2 cups shredded sharp Cheddar
- 1 7 oz jar sliced pimentos drained
- 1/4 cup mayonnaise
- 1/2 teaspoon garlic powder
- 1/4 cup green onions chopped
- Salt and pepper
- 1/2 cup cooked chopped bacon
- 1/2 cup chopped toasted pecans
- 1/4 cup green onions chopped

Instructions
- Mix cream cheese, cheeses, mayonnaise, pimentos, garlic powder and green onions with a hand mixer.
- Season with salt and pepper to taste. Chill mixture for at least 1 hour.
- Divide mixture into 3 portions and roll into 3 balls.
- Wrap each ball in plastic wrap and chill in refrigerator for 2 hours.
- Mix bacon, pecans and scallions in a small bowl.
- Roll balls into bacon mixture or preferred topping.
