Salty, sweet, buttery, my pineapple casserole is a Southern classic recipe that can be served as a delicious side dish or dessert. This casserole has a golden brown, crunchy topping and a filling made with pineapple tidbits and shredded cheese.

Classic pineapple casserole recipe

My Nana was an amazing cook and one of my very favorite recipes she would make is this pineapple casserole. Now I make it for holidays, BBQs, and just for an everyday side dish.

The only adjustment I’ve made to my Nana’s recipe is using pineapple tidbits instead of pineapple chunks. I find it’s easier to eat with the smaller pineapple.

  • Flour – All-purpose flour is needed for this recipe to help thicken the pineapple mixture.
  • Cheese – Shredded sharp cheddar cheese helps to balance the sweetness. You can also substitute with mild cheddar cheese.
  • Butter crackers – Use your favorite crackers like Ritz crackers.
  • Butter – Unsalted butter is melted and then used to coat the crushed crackers.

How to make pineapple casserole

Step one: Preheat the oven to 350 degrees F. Spray a casserole dish or pie plate with non-stick cooking spray.

Step two: Drain the pineapple tidbits. Make sure to reserve 1/4 cup of the pineapple juice for the casserole. In a large bowl, mix together pineapple tidbits, the reserved pineapple juice, flour, sugar, and shredded cheese.

Step three: Spread the pineapple mixture in prepared baking dish.

Step four: Mix together the crushed crackers and melted butter. Spread the cracker mixture over the pineapple mixture.

Step five: Bake for 25-30 minutes or until crackers start to turn golden brown.

Heather’s recipe tips

  • If possible, use freshly shredded cheese. It has a better taste and melts better.
  • You can substitute pineapple tidbits with pineapple chunks or even crushed pineapple.
  • Check the casserole after 20 minutes of baking. If you notice the cracker crumbs browning too fast, you can cover the dish with aluminum foil.

How to store leftovers

Store: Let casserole cool and then store in an airtight container in the refrigerator for up to 3 days. It can be reheated in the microwave for 2-3 minutes or in the oven at 350 for 10 minutes or until heated through.

Freeze: This casserole can be frozen. Let cool to room temperature. Place the casserole in a freezer safe container. Freeze for up to 3 months. When ready to serve, let thaw in the refrigerator and then bake at 350 degree F. ***The crackers won’t be as crunchy and crispy once it’s frozen.

Pineapple Casserole Recipe

This easy pineapple casserole is a delicious Southern dish that is salty, sweet, and so delicious. This pineapple casserole is topped with buttery Ritz crackers and can be served as a side dish or dessert.

Ingredients 

  • 2 cans pineapple tidbits drained reserving 1/4 cup juice
  • 1/2 cup sugar
  • 2 cups shredded sharp cheddar cheese
  • 1/3 cup all-purpose flour
  • 2 sleeves butter crackers, crushed
  • 6 tablespoons unsalted butter, melted

Instructions 

  • Preheat the oven to 350 degrees F. Spray either a 9-inch pie dish or a 1 1/2 quart casserole dish with non-stick cooking spray.
  • Drain the pineapple tidbits, reserving 1/4 cup of the pineapple juice.
  • In a large bowl, stir together sugar, flour, cheese, reserved pineapple juice, and pineapple tidbits.
  • Pour the pineapple mixture into prepared dish.
  • Mix together crushed crackers and melted butter. Spread over the top of the pineapple mixture.
  • Bake for 25-30 minutes or until top is golden brown.
