Ingredients 

  • 2 pounds carrots
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon salt

Instructions 

  • Preheat the oven to 400 degrees F.
  • Clean and peel the carrots with a vegetable peeler.
  • Cut the top and bottom off of the carrots. Cut the carrots into half and then cut the half again to make carrot sticks.
  • Line a baking sheet with foil. Spread the carrots out on the foil. Drizzle with olive oil. Top with the carrots with the seasonings.
  • Bake for 30 minutes or until roasted.
