My slow cooker BBQ beef recipe checks all of the boxes because it’s simple to make, tastes great, and only requires four ingredients. Use this beef to make sandwiches, nachos, quesadillas, and more.
Our family loves a good chuck roast recipe and this BBQ beef is one of our all time favorites. I came up with this recipe when I had an extra envelope of onion soup mix after making this meatloaf.

- Chuck roast – I like to use about a 3-4 pound chuck roast so that there is enough for everyone.
- Seasoning – I am using Lipton onion soup mix to give this delicious flavor. You can use the Beef Onion or Original Onion Soup Mix.
- Beef broth – This is used as the cooking liquid.
- BBQ sauce – Use your favorite barbecue sauce for this recipe. I am using Sweet Baby Rays Original.
How to make slow cooker BBQ beef
Step one: Place your chuck roast in the slow cooker. Sprinkle the onion soup mix over the beef.
Step two: Pour in beef broth and half of the BBQ sauce in the slow cooker with the beef.
Step three: Put the lid on the slow cooker and cook on low temperature for 8-10 hours or on high for 6 hours.
Step four: Remove the meat from the slow cooker. Shred with a fork. Drain off liquid from the slow cooker. Place the shredded beef back in slow cooker and mix with the remaining BBQ sauce.
How to serve shredded BBQ beef
There are several ways to serve this barbecue beef.
Sandwich – Put the beef on your favorite bun or roll. Try topping with things like slaw, pickles, and onions.
Nachos – I love using this beef to make nachos. Place on tortilla chips and top with shredded cheese. Bake until the cheese melts.
Other – This meat is also delicious to use for a quesadilla, taco, on top of a baked potato, or even as a pizza topping for BBQ pizza.

I like serving this with a variety of things like pasta salad, broccoli salad, rice, even mac and cheese.
How to store slow cooker BBQ beef
Store: Keep any leftovers in an airtight container in the refrigerator for up to 4 days. Reheat the beef in a large saucepan or slow cooker. Warm until the meat has heated through before serving.
Freeze: This meat can be frozen. Store in a freezer safe bag. Thaw overnight in the refrigerator and then warm before serving.

Chuck roast or rump roast work best for this recipe. They become tender after cooking in the slow cooker and easy to shred.
If you are making a 3-4 pound roast, cook for 8-10 hours on low or 6 hours on high. If the roast is larger, you might need to add extra cooking time. You will know it’s done cooking when it becomes easy to shred with a fork. If it’s still tough, it needs to cook longer.
