Oven Roasted Small Potatoes

Learn how to make easy, seasoned oven roasted small potatoes. These roasted potatoes make the perfect side dish. Crispy on the outside, tender and creamy on the inside.

Ingredients

  • 1.5 -2 pounds small potatoes like gold potatoes, red potatoes, or multicolored
  • 2 tablespoons olive oil
  • 1 0.7 ounce pack of Good Seasonings Italian Salad Dressing Mix
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  • Preheat your oven to 400 degrees F. Make sure the oven rack is in the middle of the oven. Cut the potatoes in half. (No need to peel the potatoes.)
  • Place the potatoes on a baking sheet. Drizzle with olive oil and then sprinkle with Italian seasoning, salt, and pepper.
  • Toss the potatoes in the oil and seasonings. Make sure to get them all coated. Place the potatoes cut side down on the baking sheet.
  • Roast the potatoes for 20-30 minutes or until the potatoes are fork tender.

Notes

  • Make sure the each potato gets coated with oil and seasoning.
  • For the crispiest potatoes, make sure to place the potato halves cut side down on the baking sheet.
  • Space out the potatoes on the baking sheet as much as you can for even baking.
  • The baking time might vary depending on the size of the potatoes.
  • You can add shredded parmesan cheese to the potatoes before baking.
