- 1 1/2 cups pumpkin seeds
- 1 tablespoon olive oil
- 1/2 teaspoon seasoned salt
- 1 teaspoon salt for the water
Remove seeds from pumpkin and remove as much pulp as you can. Place in a colander. Rinse to remove pumpkin pulp from seeds.
Fill a large pot with water and 1 teaspoon of salt. Bring to a boil. Boil seeds in water for 10 minutes, then drain.
Allow pumpkin seeds to dry on paper towels for about 30 minutes. Make sure they are totally dry before roasting.
In a bowl, mix together olive oil and seasoned salt. Stir in the pumpkin seeds.
Pour the pumpkin seeds into an air fryer basket and be sure to spread them out.
Air Fry on 350 degrees F for 7 minutes. Toss the seeds around and cook at 350 degrees F for another 7-8 minutes.
