Ingredients

  • 1 pound ground beef
  • 1 25 oz bag frozen or fresh cheese ravioli
  • 1 24 oz small curd cottage cheese
  • 2 tablespoons fresh chopped parsley
  • 1 egg
  • 1 24 oz jar marinara sauce
  • 2 cups shredded mozzarella
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon dried Italian seasoning

Instructions

  • Preheat oven 375 degrees F. Spray 9x13 baking dish with non-stick cooking spray.
  • In a large skillet, brown and crumble meat until no longer pink over medium heat.
  • Drain excess liquid.
  • Add marinara sauce, salt, pepper, and Italian seasoning.
  • In a small bowl, mix together cottage cheese, parsley, and egg.
  • Take 1/2 cup sauce and spread over bottom of baking dish.
  • Layer half of the ravioli on top of sauce in a single layer.
  • Spread half of the cottage cheese mixture over ravioli.
  • Take half of the marinara sauce and spread over cottage cheese.
  • Spread 1 cup of mozzarella over sauce.
  • Repeat steps starting with the rest of the ravioli, the cottage cheese, marinara sauce, and then the rest of the shredded cheese.
  • Cover the dish with aluminum foil. Bake for 30 minutes and then uncover and bake for 10-15 minutes or until cheese is melted and bubbly.
  • Garnish with fresh chopped parsley.

Notes

  • Spray the dish. I like to spray the baking dish with non-stick cooking spray and then a layer of sauce to make sure that nothing sticks to the dish.
  • Make ahead. You can make lazy lasagna ahead of time. Just assemble according to the directions. Cover the dish with foil and store in the refrigerator until ready to bake. You might need to add a few extra minutes of cooking time.
  • Spray the foil. I recommend spraying the party of the foil that will be close to the cheese with non-stick cooking spray. This will help the melted cheese not stick to the foil when you lift it off.
