Buffalo Chicken Pinwheels

- 1 (8 ounce) cream cheese, softened
- 1 cup cooked, shredded chicken
- 1 tablespoon ranch seasoning
- ⅓ cup buffalo sauce
- 1 cup shredded cheddar cheese
- 3 burrito size flour tortillas
Place the softened cream cheese, ranch seasonings, and buffalo sauce in a large bowl. Mix with an electric mixer until creamy.
Stir in the shredded chicken, shredded cheese, and diced green onion.
Spread 1/3 of the cream cheese mixture on top of each tortilla.
Roll each tortilla tightly. Cover with plastic wrap and place in the refrigerator for at least 30 minutes.
Cut off the ends of the tortillas. Slice into 1/2-inch rounds.
- Soften cream cheese at room temperature. This helps to make it easy to mix and spread on the tortilla.
- Thin layer. Spread a thin layer of the mixture on the tortilla. This will help them roll nicely and makes it easier to slice.
- Roll tight. It's important to roll the tortilla up tightly to prevent any of the filling from falling out.
- Chill the rolls before slicing. I like to chill the tortilla roll ups for at least 30 minutes before slicing.
- Adjust the spice level. You can adjust the amount of buffalo sauce to the spice level you like.
