Butterscotch Cheesecake Bars

These butterscotch cheesecake bars are made with a rich butterscotch graham cracker crust and topped with creamy cheesecake. A delicious dessert bar that is sure to be a hit!

Ingredients

  • 11 ounces butterscotch chips
  • ½ cup unsalted butter
  • 2 cups graham cracker crumbs
  • 16 ounces cream cheese, softened
  • ¾ cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • ½ teaspooon salt

Instructions

  • Preheat the oven to 350 degrees F. Line a 9 x 9-inch baking dish with foil. Lightly coat with non-stick cooking spray.
  • Place the butterscotch chips and butter to a saucepan. Warm over medium-low heat. Make sure to stir until melted.
  • Remove the saucepan from the heat and stir in graham cracker crumbs.
  • Remove 1 cup of the graham cracker crumb mixture and set aside.
  • Press the remaining crumb mixture into the prepared baking dish forming a crust.
  • Beat the softened cream cheese and sugar with an electric mixer for 2-3 minutes or until creamy.
  • Mix in the egg, vanilla extract and salt in with the cream cheese mixture.
  • Pour cream cheese mixture evenly over the crust. Sprinkle the remaining graham cracker mixture on top.
  • Bake for 30 minutes or until the edges start to set. It might still be a little jiggly in the center. Remove from the oven and let cool for at least 1 hour at room temperature.
  • Cover the cheesecake and chill in the refrigerator for at least 2 hours before slicing and serving.
