Cattle Drive Casserole Recipe
Cattle drive casserole is a hearty, delicious ground beef casserole. Layers of biscuit, ground beef, sour cream, and cheese, this is a meal everyone is sure to enjoy.

- 1 box Cheddar Bay biscuit mix
- ¾ cup milk
- 1 lb ground beef
- 1 cup onion, diced
- 1 red bell pepper, diced
- ¼ water
- 1 taco seasoning
- 1 cup colby jack cheese, shredded
- 2 cups cheddar cheese, shredded
- 1 can RO*TEL
- ½ cup mayonnaise
- ½ cup sour cream
Preheat the oven to 350 degrees F. Spray a 9 x 13 casserole dish with non-stick cooking spray.
Place the biscuit mix, inclosed seasoning packet, and milk in a bowl. Stir together to combine. Spread the mixture out in the prepared casserole dish.
Bake for 5 minutes.
Brown the ground beef in a large skillet over medium heat. Break up the meat while cooking. Drain off any excess grease. Stir in the diced onion and diced pepper and cook1-2 minutes.
Stir in water and taco seasonings in the ground beef.
Spread the ground beef mixture over the biscuit bottom. Spread the Rotel over the ground beef mixture.
Stir together sour cream, mayonnaise, and colby jack cheese. Spread over the Rotel.
Top with the shredded cheddar cheese. Bake for 30 minutes.
Let the casserole cool at least 10 minutes before cutting and serving.
- Spreading the biscuit dough. I like to either spray my hands or a spatula with non-stick cooking spray to help spread the biscuit dough in the casserole dish. Try to spread it out into an even layer.
- Shred the cheese. I recommend shredding your own cheese for the best taste.
- Let it rest. Let the casserole rest for about 10 minutes before cutting. This helps the casserole stay together.
