- 1 lb ground beef
- 1 15 oz tomato sauce
- 1/2 cup diced green bell pepper
- 1/2 cup diced onion
- 12 oz egg noodles
- 2 cups small curd cottage cheese
- 1/2 cup sour cream
- 2 cups shredded cheese
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Preheat oven to 350 degrees F. Spray 9x13 casserole dish with non-stick spray.
Brown ground been in a large skillet over medium heat. Cook until cooked through. Drain excess grease.
Add diced green pepper and onion and stir for 2-3 minutes.
Pour tomato sauce over ground beef and season with salt and pepper. Turn to low heat.
While sauce is cooking, cook egg noodles according to package directions. Drain water.
In a bowl, stir sour cream, cottage cheese and ground black pepper.
Layer half of the noodles, half of the sauce, half of the cottage cheese mixture, and 1 cup of shredded cheese. Repeat layers.
Bake for 20-25 minutes or until cheese is melted.
Tips:
- I used light sour cream and low-fat cottage cheese for this recipe but it works fine with regular.
- Feel free to use your favorite "melty" cheese. I love using a cheddar mix.
- If you have picky kids feel free to omit the onion or dice the onion and pepper very small.
