Churro Snack Mix

- 6 cups Honeycomb cereal
- 1 cup light brown sugar
- 1/2 cup unsalted butter
- 1/3 cup corn syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon baking soda
- 1/4 cup granulated sugar
- 1 teaspoon cinnamon
Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
Pour the Honeycomb cereal in a large bowl.
Place the butter, brown sugar, and corn syrup in a medium size saucepan. Warm over medium heat, making sure to constantly stir. Bring the mixture to a light, rolling boil for 1 minute.
Remove the saucepan from the heat and stir in the vanilla and baking soda.
Pour the butter mixture over the cereal. Toss to completely coat. Spread the cereal out on the prepared baking sheet.
Bake for 4 minutes, carefully toss the cereal and then bake another 4 minutes.
Stir the sugar and cinnamon together. Sprinkle of the cereal mixture. Let completely cool. Break apart to serve.
