Congo Bars Recipe

Congo bars are cookie bars filled with chocolate chips. They are soft, chewy and a staple dessert in our family.

Ingredients

  • 3/4 cup butter, softened
  • 2 1/2 cups brown sugar
  • 3 eggs
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 3/4 cups all-purpose flour
  • 1 1/2 cups semi-sweet chocolate chips 1 (12oz) bag

Instructions

  • Preheat oven to 350 degrees F. Coat a 9x13 pan with non-stick cooking spray.
  • With an electric mixer, mix together brown sugar and butter until creamy.
  • Mix in eggs, one at a time. 
  • In a separate bowl, sift together flour, baking powder and salt. 
  • Slowly add flour mixture in with sugar mixture. 
  • Stir in chocolate chips.
  • Pour batter into prepared pan. Bake for 25-30 minutes. Be sure not to over bake. 

Notes

  • Soften the butter. Let your butter soften slightly before making the dough. I usually place my butter out on the counter an hour before I am going to bake.
  • Use room temperature ingredients. This helps for even cooking.
  • Don't over bake. Be careful not to over bake these cookie bars.
  • Let the cool before cutting. Make sure to let the bars cool before cutting into squares.
