Ingredients

  • 1 pound chicken tenderloings
  • 8 cups chicken broth
  • 1/2 cup mayonnaise
  • 1/4 cup ranch dressing
  • 1/4 cup celery, diced
  • 1/4 cup shredded mild cheddar cheese
  • 1/4 cup bacon crumbles about 5 slices cooked bacon
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  • Pour chicken stock in a large pot and bring to a boil. Add the chicken tenderloins and boil for 10 minutes or until the internal temperature of the chicken reaches 165 degrees F. If you are using rotisserie chicken, skip this step.
  • Place the cooked chicken in a food processor or mixer bowl. Pulse a few times to shred the chicken. Be sure not to over mix or pulse.
  • In a large bowl, mix together the mayonnaise, ranch dressing, salt, pepper, and garlic powder.
  • Stir in the diced celery, cheese, bacon, and shredded chicken.
  • Serve or cover and chill in the refrigerator.

Notes

  • Chicken: I recommend boiling your chicken in chicken broth, chicken stock, or water with chicken bouillon. This is a great way to add extra flavor to your chicken. ***If you are using chicken breasts it might take a little longer to boil.
  • Shredding the chicken: Chicken salad chick is known for the finely shredded chicken. To achieve this I recommend using a food processor or mixer. Just be sure not to over mix.
  • Ranch: You can use bottled ranch, homemade ranch, or stir together 1 tablespoon or ranch seasoning with 1/2 cup of sour cream.
