Servings: 4
- 1 16 ounce cottage cheese
- 1 tablespoon taco sesaoning
- 1 cup shredded cheddar cheese
- ½ cup water
- 1 10 ounce Rotel
Place the cottage cheese in a food processor or blender. Whip the cottage cheese until creamy.
Add in the shredded cheese, taco seasoning, and water. Blend until smooth.
You can seve as is or stir in drained Rotel diced tomatoes with green chiles.
If you would like it hot. Microwave for 1 minute.
- Make sure to whip the cottage cheese first. This is an important step that I didn't do the first time working on this recipe. If you don't whip it first, the dip will be a little lumpy. You can use a high powered blender or food processor.
- Warming the queso. I tried warming the queso on the stove and found that you need to warm it on low for just a minute or two. It's easiest to heat in the microwave in 15 second intervals. You can to be careful not to overheat or the dip will separate.
