Equipment

  • 1 food processor or blender

Ingredients

  • 1 16 ounce cottage cheese
  • 1 tablespoon taco sesaoning
  • 1 cup shredded cheddar cheese
  • ½ cup water
  • 1 10 ounce Rotel

Instructions

  • Place the cottage cheese in a food processor or blender. Whip the cottage cheese until creamy.
  • Add in the shredded cheese, taco seasoning, and water. Blend until smooth.
  • You can seve as is or stir in drained Rotel diced tomatoes with green chiles.
  • If you would like it hot. Microwave for 1 minute.

Notes

  • Make sure to whip the cottage cheese first. This is an important step that I didn't do the first time working on this recipe. If you don't whip it first, the dip will be a little lumpy. You can use a high powered blender or food processor.
  • Warming the queso. I tried warming the queso on the stove and found that you need to warm it on low for just a minute or two. It's easiest to heat in the microwave in 15 second intervals. You can to be careful not to overheat or the dip will separate.
