- 2 carrots peeled and sliced
- 2 stalks celery chopped small
- 1 small onion diced small
- 8 cups chicken broth
- 2 cups water
- 1 package 20 ounce refrigerated tortellini
- 1 teaspoon salt
- 1 teaspoon ground black pepper
Melt the butter in a large stock pot or Dutch oven. Place the carrots, celery, and onion in the pot and cook about 2-3 minutes or until softened.
Pour broth into the pot and bring to a boil. Reduce the heat to a simmer and pour in tortellini. Cover with a lid and cook the tortellini according to package directions.
Add in salt and pepper. Stir and serve warm.
