- 1.5 - 2 pounds boneless chicken breast
- 2 cups Minute Rice
- 1 10.5 ounce cream of chicken soup
- 1 10.5 ounce cream of mushroom soup
- 1 10.5 ounce can of water
- 2 ounce pack Lipton Onion Soup Mix
- 1 tablespoon unsalted butter, melted
Preheat the oven to 350 degrees F. Spread melted butter in a 9 x 13 baking dish.
Place the cream of chicken soup, cream of mushroom soup, water, and Minute Rice in a large bowl. Stir together to combine.
Spread the rice mixture in the prepared baking dish. Place the chicken breasts on top of the rice.
Sprinkle the onion soup mix on top of the chicken.
Cover the baking dish with foil. Bake for 1 hour.
- Cover the baking dish tightly. Covering the dish helps to trap the steam to make sure the rice fully cooks.
- Don't peak! Don't uncover the dish during cooking. This will release the steam and could prevent the rice from cooking.
- Check the temperature. Make sure to check the chicken's internal temperature to ensure it is fully cooked. It should reach at least 165 degrees F.
- Let it rest. I recommend letting it rest 5 minutes before serving. This lets the rice finish absorbing any liquid.
