Guacamole Nachos

Learn how to make guacamole nachos with just a few simple ingredients. Cheesy nachos chips topped with a homemade guacamole.

Ingredients

Guacamole

  • 3 ripe avocados
  • 2 tablespoons lime juice
  • 1/2 red onion, diced small
  • 1 clove minced garlic
  • 1/4 cup fresh, chopped cilantro
  • 1 tablespoon minced jalapeno
  • 1/2 teaspoon salt

Nachos

  • 1 bag tortilla chips
  • 2 cup shredded Colby Jack cheese

Instructions

  • Preheat the oven to 375 degrees F. Line a baking sheet with aluminum foil or parchment paper.
  • Spread tortilla chips on the foil. Top with freshly shredded cheese. Bake for 3-5 minutes or until cheese melts.
  • Scoop the inside of the avocados into a large bowl. Pour lime juice over the avocados. Mash until creamy.
  • Stir in the diced onion, garlic, diced jalapeno, salt, and cilantro.
  • Top the nachos with the guacamole and serve.

Notes

  • Make sure to try and use fresh avocados. Give them a little squeeze and if they have a little give to them, they are perfect.
  • Try and use freshly shredded cheese. This makes a world of difference. It just melts better and has more flavor.
  • You can easily adjust this recipe to taste. Feel free to leave out the cilantro or jalapeno if you don't like these ingredients.
