Guacamole Nachos

Guacamole
- 3 ripe avocados
- 2 tablespoons lime juice
- 1/2 red onion, diced small
- 1 clove minced garlic
- 1/4 cup fresh, chopped cilantro
- 1 tablespoon minced jalapeno
- 1/2 teaspoon salt
Nachos
- 1 bag tortilla chips
- 2 cup shredded Colby Jack cheese
Preheat the oven to 375 degrees F. Line a baking sheet with aluminum foil or parchment paper.
Spread tortilla chips on the foil. Top with freshly shredded cheese. Bake for 3-5 minutes or until cheese melts.
Scoop the inside of the avocados into a large bowl. Pour lime juice over the avocados. Mash until creamy.
Stir in the diced onion, garlic, diced jalapeno, salt, and cilantro.
Top the nachos with the guacamole and serve.
- Make sure to try and use fresh avocados. Give them a little squeeze and if they have a little give to them, they are perfect.
- Try and use freshly shredded cheese. This makes a world of difference. It just melts better and has more flavor.
- You can easily adjust this recipe to taste. Feel free to leave out the cilantro or jalapeno if you don't like these ingredients.
