Kentucky Butter Cake Cookies

Cookie
- 1 box golden butter cake mix or yellow cake mix
- 2 eggs
- 1/3 cup unsalted butter, melted
- 1/4 teaspoon butter extract
Glaze
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter
- 1 teaspoon vanilla
- 1 tablespoon water
Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
In a large bowl, mix together the cake mix, eggs, butter extract, and butter. Scoop a heaping tablespoon of dough and place on prepared baking sheet. Make sure to place the cookie dough balls about 2-inches apart.
Bake the cookies for 7-8 minutes. Let them cool for about 5 minutes before transferring to a wire rack. (They may look a little under done but will be fine once they cool.)
Make the cookie glaze by placing the granulated sugar, butter, vanilla, and water in a small saucepan.
Warm over medium-low heat. Make sure to whisk while the glaze is warming. Heat until the sugar dissolves.
Spoon the glaze over the cooled cookies. Let the glaze set for about 5 minutes before serving the cookies.
- Make sure to let the melted butter cool a little bit before mixing it in with the eggs. If the butter is too hot, it might scramble the eggs.
- Be careful not to over bake these cookies. Check them at 7 minutes of baking time. The cookies might not look completely set but they will be perfect once they cool.
- Let the cookies completely cool before spooning the glaze on top. You will also want the glaze time to set, about 5 minutes before serving.
- This recipe will make about 18 cookies.
