Kielbasa and Potatoes
Kielbasa and potatoes is a simple and delicious meal filled with kielbasa sausage, fried potatoes, onions and peppers.

- 1 14 ounce kielbasa, sliced into rounds
- 4 potatoes, diced into small cubes
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 red bell pepper, diced
- 1 garlic clove, minced
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
Slice kielbasa into 1/4 inch rounds.
Place sliced kielbasa into a large skillet and cook over medium heat until they start to brown. Make sure to occasionally stir so that they don't stick.
Carefully remove the kielbasa sausage from the skillet but be sure to leave any grease.
Add in olive oil, diced potatoes, salt and pepper. Stir the potatoes and then cover the skillet. Cook for 8-10 minutes, stirring occasionally, or until potatoes start to soften.
Remove lid and add in diced onion and bell pepper. Keep cooking another 7-8 minutes or until they start to soften.
Stir in minced garlic and cook 1-2 minutes more.
Add in kielbasa and let warm through, about 5 minutes. Optional garnish with fresh parsley. Serve hot.
- If the Polish sausage leaves a lot of grease in the skillet, you might not need to add any olive oil.
- If you are using turkey sausage, you might need to add an extra tablespoon of olive oil.
- If you are using a tougher potato, like russets, you might want to cut them and then microwave for 5 minutes before adding to the skillet to help soften them up.
- Try adding in some sauerkraut or shredded cabbage towards the end of the cooking process for a little crunch.
- This meal is also delicious topped with fresh diced tomatoes.
- Like a little heat? Try adding 1/2 tablespoon of crushed red pepper to the mixture or a little hot sauce.
