Lime Coconut Balls

- 2 cups powdered sugar
- 1 11 ounce box, Nilla wafers
- 1 cup macadamia nuts
- 6 tablespoons unsalted butter, softened
- ½ teaspoon vanilla extract
- ¾ cup limeade concentrate, thawed
- ½ teaspoon lime zest
- 2 cups sweetened coconut flakes
Line a cookie sheet with wax paper.
Place Nilla cookies in a food processor. Pulse until crushed into a crumb texture.
Remove the crumbs and place in a large bowl.
Place the macadamia nuts in the food processor and pulse until chopped. Pour the nuts in the bowl with the crushed cookies.
Add powdered sugar, softened butter, limeade concentrate, vanilla extract, and lime zest into the same bowl with the cookies and nuts.
Stir all of the ingredients together until combined.
Place the coconut flakes on a large plate or bowl.
Using a small cookie scoop or spoon, scoop out the mixture and roll into 1-inch balls.
Roll each ball in the coconut flakes and then place on the baking sheet.
Chill in the refrigerator for at least 2 hours before serving.
