Servings: 6
- 1 20 ounce refrigerated cheese tortellini
- 1 pound italian sausage
- 1 tablespoon oil from sun dried tomato jar
- 3 cloves garlic, minced
- 2 tablespoons all purpose flour
- 1/2 cup sun dried tomatoes, diced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes
- 2 cups chicken broth
- 1 cup grated parmesan cheese
- 1/2 cup heavy cream
- 1 cup fresh spinach
Place the Italian sausage in a large skillet. Cook on medium heat. Break the sausage up while cooking until browned. Once cooked through, remove the sausage and set aside.
Using the same pan, add in 1 tablespoon of oil from the sun dried tomato jar. Mix in the garlic, salt, pepper, Italian seasoning, and red pepper flakes. Stir for 30 seconds.
Add in the chopped sun dried tomatoes and flour. Stir to combine.
Stir in the chicken broth. Let the broth come to a boil and simmer for 3-4 minutes.
Pour in the tortellini. Stir the tortellini in with the ingredients. Cover the pan with a lid and cook for 4 minutes.
Add in the cooked sausage, parmesan cheese, heavy cream, and spinach. Stir and remove from heat.
- I recommend using freshly grated Parmesan cheese if possible.
- If you decided to use frozen tortellini, I recommend thawing it out before using.
- Make sure to use sun dried tomatoes that are packed in oil.
- Don't over cook the tortellini. Make sure to cook it until al dente so it doesn't get mushy.
