- 1 cup all-purpose flour
- 1 ½ cups old fashioned rolled oats
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ¾ cup light brown sugar
- ¼ cup sugar
- ¼ cup butter, softened
- 1 teaspoon vanilla extract
- 1 egg
- 1 cup dried strawberries, chopped
Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
Mix together the flour, oats, baking soda, and salt in a bowl. Set aside.
Use an electric mixer to mix together the butter, brown sugar, and sugar until creamy, 2-3 minutes.
Mix in egg and vanilla extract.
Mix in the flour mixture.
Stir in the chopped dried strawberries.
Use a cookie scoop to place batter on the prepared baking sheet. Place each cookie dough ball about 2-inches apart.
Bake 10-12 minutes or until the edges of the cookies start to slightly turn golden brown. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
