Oatmeal Strawberry Cookies

Chewy, delicious oatmeal strawberry cookies are the perfect solution when you are craving a cookie. These cookies are easy to make and full of oats and plump dried strawberries.

Ingredients

  • 1 cup all-purpose flour
  • 1 ½ cups old fashioned rolled oats
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup light brown sugar
  • ¼ cup sugar
  • ¼ cup butter, softened
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 cup dried strawberries, chopped

Instructions

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Mix together the flour, oats, baking soda, and salt in a bowl. Set aside.
  • Use an electric mixer to mix together the butter, brown sugar, and sugar until creamy, 2-3 minutes.
  • Mix in egg and vanilla extract.
  • Mix in the flour mixture.
  • Stir in the chopped dried strawberries.
  • Use a cookie scoop to place batter on the prepared baking sheet. Place each cookie dough ball about 2-inches apart.
  • Bake 10-12 minutes or until the edges of the cookies start to slightly turn golden brown. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
