Orange Coconut Balls

Ingredients

  • 4 cups powdered sugar
  • 1 11 ounce box vanilla wafer cookies
  • 4 tablespoons unsalted butter, softened
  • 1 cup chopped pecans
  • ½ teaspoon vanilla extract
  • ¾ cup orange juice concentrate, thawed
  • ¼ teaspoon orange zest
  • 2 cups sweetened coconut flakes

Instructions

  • Line a cookie sheet with wax paper.
  • Place the vanilla wafers in a food processor. Pulse until crumb texture.
  • Add cookie crumbs, powdered sugar, softened butter, chopped pecans, orange juice concentrate, vanilla extract, and orange zest in a large bowl.
  • Mix the ingredients together until combined.
  • Pour the coconut flakes into a wide bowl or on a plate.
  • Using a small cookie scoop or spoon, scoop out the mixture and then roll into 1-inch balls.
  • Roll each of the balls in the coconut flakes. Place them on the prepared cookie sheet.
  • Chill the balls in the refrigerator for at least 2 hours or until they are firm.
