- 4 cups powdered sugar
- 1 11 ounce box vanilla wafer cookies
- 4 tablespoons unsalted butter, softened
- 1 cup chopped pecans
- ½ teaspoon vanilla extract
- ¾ cup orange juice concentrate, thawed
- ¼ teaspoon orange zest
- 2 cups sweetened coconut flakes
Line a cookie sheet with wax paper.
Place the vanilla wafers in a food processor. Pulse until crumb texture.
Add cookie crumbs, powdered sugar, softened butter, chopped pecans, orange juice concentrate, vanilla extract, and orange zest in a large bowl.
Mix the ingredients together until combined.
Pour the coconut flakes into a wide bowl or on a plate.
Using a small cookie scoop or spoon, scoop out the mixture and then roll into 1-inch balls.
Roll each of the balls in the coconut flakes. Place them on the prepared cookie sheet.
Chill the balls in the refrigerator for at least 2 hours or until they are firm.
