- 1 cup uncooked orzo pasta
- 1 cup arugula
- 1 cup strawberries chopped
- 1/2 cup goat cheese
- 1/2 cup chopped pecans
- 1/8 teaspoon salt
- 1/8 teaspoon ground black pepper
Dressing
- 1 tablespoon lemon juice
- 3 tablespoon olive oil
- 1 tablespoon white vinegar
- 1 tablespoon Dijon mustard
Cook orzo according to package directions. Drain and season with salt and pepper.
Whisk together dressing ingredients, lemon juice, olive oil, vinegar, and mustard.
Chop arugula and strawberries.
Place orzo, strawberries, arugula, pecans, and cheese in a bowl. Drizzle on dressing and toss to coat.
