- 2 8 oz packages cream cheese, softened
- 1 1/2 cups shredded pepper jack cheese
- 1 1/2 cups shredded sharp Cheddar
- 1 7 oz jar sliced pimentos drained
- 1/4 cup mayonnaise
- 1/2 teaspoon garlic powder
- 1/4 cup green onions chopped
- Salt and pepper
- 1/2 cup cooked chopped bacon
- 1/2 cup chopped toasted pecans
- 1/4 cup green onions chopped

Mix cream cheese, cheeses, mayonnaise, pimentos, garlic powder and green onions with a hand mixer.
Season with salt and pepper to taste. Chill mixture for at least 1 hour.
Divide mixture into 3 portions and roll into 3 balls.
Wrap each ball in plastic wrap and chill in refrigerator for 2 hours.
Mix bacon, pecans and scallions in a small bowl.
Roll balls into bacon mixture or preferred topping.
