Pineapple Casserole Recipe
This easy pineapple casserole is a delicious Southern dish that is salty, sweet, and so delicious. This pineapple casserole is topped with buttery Ritz crackers and can be served as a side dish or dessert.

- 2 cans pineapple tidbits drained reserving 1/4 cup juice
- 1/2 cup sugar
- 2 cups shredded sharp cheddar cheese
- 1/3 cup all-purpose flour
- 2 sleeves butter crackers, crushed
- 6 tablespoons unsalted butter, melted
Preheat the oven to 350 degrees F. Spray either a 9-inch pie dish or a 1 1/2 quart casserole dish with non-stick cooking spray.
Drain the pineapple tidbits, reserving 1/4 cup of the pineapple juice.
In a large bowl, stir together sugar, flour, cheese, reserved pineapple juice, and pineapple tidbits.
Pour the pineapple mixture into prepared dish.
Mix together crushed crackers and melted butter. Spread over the top of the pineapple mixture.
Bake for 25-30 minutes or until top is golden brown.
- If possible, use freshly shredded cheese. It has a better taste and melts better.
- You can substitute pineapple tidbits with pineapple chunks or even crushed pineapple.
- Check the casserole after 20 minutes of baking. If you notice the cracker crumbs browning too fast, you can cover the dish with aluminum foil.
