Polish Sausage Skillet

- 1 lb polish sausage, sliced
- 1 tablespoon olive oil
- 1 small onion
- 1 green bell pepper
- 1 red bell pepper
- 1 yellow bell pepper
- 8 oz mushrooms, sliced
- 1 8 oz can petite diced tomatoes
- 1/2 cup chicken broth
- 1 teaspoon Italian seasoning
Slice sausage into 1/2 inch rounds. Cut peppers, onions into strips and dice mushrooms.
Add olive oil to pan and heat over medium heat. Add in polish sausage and cook until starting to brown. Remove sausage from pan and set aside.
Add peppers, onions and mushrooms into the same pan. Cook until starting to soften, about 5 minutes.
Stir in chicken broth, seasoning and diced tomatoes. Bring to a boil, reduce heat and let simmer 5 more minutes.
Serve warm.
