- 1 cup unsalted butter, softened
- ¾ cup sugar
- ¾ cup light brown sugar
- 2 eggs
- 2 ½ cups all-purpose flour
- ¼ teaspoon salt
- 1 teaspoon baking soda
- 1 ½ teaspoons vanilla extract
- 2 cup potato chips, crumbled
- 1 cup butterscotch chips
Preheat the oven to 350 degrees F.
Cream together the butter, brown sugar and sugar with an electric mixer.
Mix in the eggs and vanilla. Mix in the flour, baking soda, and salt until combined.
Using a spatula or wooden spoon, fold in the potato chips and butterscotch chips.
Line a baking sheet with parchment paper. Scoop dough on prepared baking sheet, 2 inches apart.
Bake for 10 minutes or until cookies start to turn light brown around the edges.
Let the cookies cool on a wire rack.
