- 1 lb kielbasa sausage
- 24 ounces small golden potatoes or small red potatoes
- 2 15 ounce green beans, drained
- 1/4 cup olive oil
- 1/2 cup diced onion
- 1 clove minced garlic
- 1 teaspoon Cajun seasoning I use Slap Ya Mama seasoning
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
Preheat the oven to 400 degrees. Spray a 9 x 13 casserole dish with non-stick cooking spray.
Rinse and dry the potatoes. Cut the potatoes into quarters.
Place the potatoes in a large bowl. Add in the olive oil, salt, ground black pepper, and Cajun seasoning. Stir to combine.
Slice kielbasa into rounds and then in half. Cook the kielbasa in a large skillet over medium heat. Stir and cook until starting to brown.
Add in the diced onion and minced garlic. Stir for one minute.
Pour the kielbasa mixture into the bowl with the potatoes. Add in drained green beans. Stir to combine the mixture.
Spread the mixture out into prepared baking dish. Cover with foil and bake for 45 minutes or until the potatoes are tender.
Serve the casserole warm.
