Strawberry Coconut Bars

Strawberry coconut bars have a delicious shortbread base topped with a layer of strawberry jam and sweet coconut. These bars are an amazing combination of flavors and texture.

Ingredients

  • 1 ⅓ cup all-purpose flour
  • ¼ cup sugar
  • ¾ teaspoon baking powder
  • ½ cup unsalted butter, softened
  • 1 egg
  • ½ cup strawberry jam

Topping

  • ¼ cup sugar
  • 1 egg
  • 2 cups sweetened coconut flakes

Instructions

  • Preheat the oven to 350 degrees F. Line an 8 x 8 baking pan with parchment paper. Lightly spray with non-stick cooking spray.
  • Combine flour, sugar, baking powder, egg, and softened butter, in a mixer. Mix until dough forms.
  • Press the dough into the prepared baking pan. Bake for 15 minutes.
  • Spread the strawberry jelly over the warmed crust.
  • To make the topping, whisk together an egg and sugar in a bowl. Stir in the coconut flakes.
  • Spoon the mixture over the jelly. Bake for another 15 minutes.
  • Let the bars cool before cutting.
