- 1 ⅓ cup all-purpose flour
- ¼ cup sugar
- ¾ teaspoon baking powder
- ½ cup unsalted butter, softened
- 1 egg
- ½ cup strawberry jam
Topping
- ¼ cup sugar
- 1 egg
- 2 cups sweetened coconut flakes
Preheat the oven to 350 degrees F. Line an 8 x 8 baking pan with parchment paper. Lightly spray with non-stick cooking spray.
Combine flour, sugar, baking powder, egg, and softened butter, in a mixer. Mix until dough forms.
Press the dough into the prepared baking pan. Bake for 15 minutes.
Spread the strawberry jelly over the warmed crust.
To make the topping, whisk together an egg and sugar in a bowl. Stir in the coconut flakes.
Spoon the mixture over the jelly. Bake for another 15 minutes.
Let the bars cool before cutting.
