Strawberry Spinach Salad

This easy strawberry spinach salad with goat cheese is sweet, savory, and tangy. Delicious and simple strawberry salad with a homemade balsamic vinegar dressing.

Ingredients

  • 4 cups spinach
  • 1 pint strawberries washed and diced
  • 4 oz of crumbled goat cheese
  • ½ cup chopped pecans or walnuts
  • ¼ cup balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 garlic clove minced
  • ½ cup extra virgin olive oil
  • teaspoon salt
  • teaspoon ground black pepper

Instructions

  • If you would like to toast your nuts, place them on a parchment lined baking sheet. Place in a preheated oven at 350 degrees for about 5 minutes.
  • Mix together spinach, strawberries, goat cheese, and nuts.
  • To make the dressing, combine vinegar, oil, garlic, mustard, salt and pepper in a bowl or jar.
  • Whisk or shake the jar to combine the dressing.
  • Drizzle the dressing over the salad to coat. Toss the salad and serve.

Notes

Candied walnuts are also great on this salad.
