Course: Appetizer
Cuisine: American
Servings: 6
- 1 can black eyed peas drained
- 1 can black beans drained
- 1 can corn kernels drained
- 3 green onions diced
- 1 red bell pepper diced
- 1 jalapeno diced
- 1 cup cherry tomatoes cut into quarters
- 1/2 cup fresh cilantro chopped
- 1/4 cup olive oil
- 3 tablespoons red wine vinegar
- 2 tablespoons lime juice
- 1/2 teaspoon garlic salt
- 1/2 teaspoon chili powder
- 1/4 teaspoon ground black pepper
Pour the olive oil, vinegar, lime juice, chili powder, garlic salt, and pepper in a bowl. Whisk to combine and set aside.
Pour black eyed peas, black beans, corn, peppers, jalapeno, onion, and cilantro in a large bowl. Toss to combine. Pour the dressing over the cowboy caviar and toss again to coat everything in the dressing.
- Try and chop everything small. You want it to be able to fit on a chip.
- I recommend using fresh lime juice. It does taste better than the bottled stuff.
- Make sure to drain everything well before mixing.
